HOPE EASTER EGG CASSEROLE
Prepare a buttered 9" x 13" glass casserole dish. Into the bottom layer enough slices of white bread to completely cover the bollom. Next, add a layer of cheese (American, Cheddar or your choice--Cojack is really tasty!). If desired, you may also add a layer of cooked ham, bacon, turkey or sausage. Cover with another layer of white bread slices.
In a separate bowl, mix together 8 eggs, 1/2 teaspoon dry mustard and 1/2 teaspoon salt. Add 3 cups milk and beat well.
Pour rhe liquid mixture slowly over the casserole, allowing to completely saturate the bread. Add extra milk, if necessary, to completely cover the layers.
Toss 3 cups of Corn Flakes with one stick of melted butter and distribute over the entire casserole. Cover with foil and refrigerate overnight.
Bake 1 hour at 350 degrees. Uncover, if you wish, and bake a little longer to "crisp up" the topping. Serve and enjoy....
COMMUNION BREAD
1-1/2 Cups white flour
1/2 Cup whole wheat flour
1/4 teaspoon salt
2 teaspoons sugar
3/4 teaspoon baking soda
2 Tablespoons shortening
1/2 Cup water + 2 Tablespoons
Mix dry ingredients, but do not sift. Add shortening. Add water gradually until mixture forms into a ball. Knead and shape into a roll and divide into fourths. Roll dough into a circle about 1/4 inch thick. Place dough on greased or parchment-covered baking sheet. Score the surface into small squares, pressing the knife at least halfway through the dough's thickness. Bake for 10 minutes at 350 degrees, checking occasionally in order to prick any air bubbles that may form during baking.
